Strawberry Spinach Salad: Easy and Fresh
I absolutely love salad. It’s healthy, fresh, and a great way to have a light meal. When it’s hot in the summer (like it has been this summer in Utah), not only am I not in the mood to cook, I’m not the mood to eat. This is where salad can save the day. Our Strawberry Spinach Salad has the perfect summer ingredients. There’s strawberries, blueberries, sweet red onions, and tangy feta cheese. But what really sets this salad apart is Cinnamon Pecans.
Cinnamon Pecans
It’s easy to do. Throw some Chef Shamy Cinnamon Brown Sugar Honey Butter in a pan, melt it down, and toss some pecans around in the butter. It sounds almost too simple to be that delicious, but it caramelizes the nuts in a perfect way to add scrumptious flavor to the Strawberry Spinach Salad. But, you say, it’s too hot to roast nuts! Well, the butter takes about a minute to melt and the pecans were in the pan for about another minute– so two minutes overall! Doesn’t seem like it would heat up the whole house. But it doesn’t matter, because it’s worth it either way.
How to Dress A Strawberry Spinach Salad
There are many, many options when trying to choose a salad dressing. There’s salad dressing in the condiment aisle, there’s salad dressing in the produce section, there’s salad dressing everywhere! While it can be overwhelming, it can be a wonderful thing. I used a lovely Strawberry Poppy Seed Dressing when I made it. But you could try a Raspberry Vinaigrette, or a Balsamic! The trick is to find something you like and commit to it. You can even toss the spinach in the dressing first to ensure even distribution of flavor.

Strawberry Spinach Salad | Chef Shamy

5 oz pecan halves
3 cups spinach
1/2 cup sliced red onion
1/2 fresh strawberries, sliced
1/3 cup fresh blueberries
1/3 cup feta (or bleu) cheese
3 T Strawberry Poppyseed Dressing
Directions
- In a saucepan, melt Chef Shamy Cinnamon Brown Sugar Honey Butter.
- Toss with pecans 1-2 min, until coated and warm.
- Set aside to cool.
- In a large bowl, add spinach, onion, strawberries, blueberries, cheese, dressing, and cinnamon pecans.
- Toss & Serve
