These Sesame Ginger Garlic Rice Noodles are a delicious dinner that comes together in less than 15 minutes! It’s ideal for a busy weeknight or a packed weekend.

Rice noodles are available in any grocery store! You don’t have to get take out to enjoy them. Rice noodles aren’t complicated. They are noodles that have been made with rice flour.  Typically a little more chewy than traditional noodles, rice noodles have a really nice texture that’s unique and delicious.

The cool thing about rice noodles is the cooking process. Read the directions on your package for exact instructions, but in general, you don’t boil them. Bring water to a boil, then take the water off the heat and let the noodles sit in the warm water for 8-10 minutes. This allows the noodles to be soft, but still a little chewy.

If we break each one down: the sesame flavor comes from a little bit of sesame oil. Sesame can become an overpowering flavor if you’re not careful– a little goes a long way. But you’ve gotta have a little bit.

Fresh ginger adds so much flavor! Do you have to use fresh? If you don’t have it, and don’t have time for a trip to the store, there are a lot of other options. You can buy handy squeeze bottles to keep in your fridge, and there’s always powdered ginger.  Ginger is one of those flavors that you can add a little more or less, depending on your personal taste. But we say, don’t skimp!

Chef Shamy Garlic Butter is really the thing that bring everything together. It’s got a great garlic flavor, and compliments the rest of the recipe incredibly well.

The Recipe

This recipe calls for bok choy, which is a delicious and perhaps obscure vegetable. When working with bok choy, it’s important to clean it really well, and then it cooks pretty quickly. Add other vegetables if you want!

Sesame Ginger Garlic Rice Noodles

Ingredients

  • 1 pack rice noodles

  • 2 T Chef Shamy Garlic Butter

  • 2 T ginger, finely chopped

  • 1 tsp sesame oil

  • 2 cups bok choy

  • 2 T soy sauce, or more to taste

  • Salt and pepper, to taste

  • 1 green onion stalk, thinly sliced

  • sesame seeds (optional)

Directions

  • Prepare noodles according to package directions.
  • In a large wok, melt Garlic Butter. Add ginger and sesame oil and saute for 1-2 minutes.
  • Add washed and quartered bok choy, and cook for an additional 2 minutes.
  • Toss in cooked noodles. Add soy sauce, then salt and pepper to taste.
  • Remove from heat. Garnish with green onions and sesame seeds.
  • Serve immediately
