Tacos
Tacos are a staple in our house, and in many houses across the country. And chicken tacos have surpassed beef tacos in my mind. Especially since we came up with this Baked Chicken Tacos recipe. It’s delicious, and perfect for a crowd!
Hard tortillas are baked then filled with an amazing chicken mixture, topped with cheese, and then baked again. Then you can top these tacos with whatever you want: lettuce, tomatoes, sour cream, salsa, guacamole, all the good stuff.
The Shell
Baking the hard taco shell before the filling goes in is crucial. The extra heat adds slightly more crunch to the tortilla, and reinforces it against the soft chicken filling. Otherwise, your shells will become soggy and fall apart as you’re trying to eat them!
It only takes a few minutes in the oven, which is perfect, because the chicken filling only takes a few minutes. You can do them at the same time.
The Filling
This filling is easy and tasty, so let’s talk about it.
Start with a scoop of our Fresh Churned Garlic Butter and some diced onion. As they cook, the onions soak up all that delicious garlic flavor. Add some pre-cooked chicken. You can buy a rotisserie chicken or some pre-shredded chicken from the store. Then add some diced tomatoes and green chiles from a can. You can find it at any market. The last step is taco seasoning.
Cook it for a few minutes, and then you’re done! Scoop it into the baked shells, top with some cheese. Bake again, and you’re ready for toppings!

Baked Chicken Tacos

½ cup onion diced
½ lb cooked, shredded chicken
1 can diced tomato and green chiles
1 T taco seasoning
10-12 hard taco shells
2 cups Mexican blend cheese
Toppings, as desired
Directions
- Preheat oven to 400° F.
- Arrange 10-12 tacos shells in a 9×13 pan. Bake for 5 minutes.
- Meanwhile, melt Garlic Butter in a skillet over medium heat. Add diced onion and saute 5 minutes. Add shredded chicken, diced tomato and green chiles, and taco seasoning. Stir to combine, and cook for 3-5 minutes, until warm.
- Divide the mixture evenly between the taco shells. Sprinkle cheese in each taco, and bake again for 10 minutes.
- Serve with your desired toppings.
