St. Patrick’s Day Popcorn
St. Patrick’s Day is only one day of the year, but it’s a great food holiday! Corned beef, potatoes, beer — all delicious. But sometimes the sweet side of the holiday can be overlooked, so we thought we’d come up with an easy and delicious dessert. Enter: St. Patrick’s Day Popcorn. This snack mix is sweet and salty, perfect for the whole family to share. It’s also easy to make, and you can do it in less than ten minutes.
Let’s talk through this festive recipe.
Marshmallows
The first step is to pop a bunch of popcorn — we want 10 cups when we’re done. You’ll need roughly 1/3 cup of popcorn kernels. Set the popped corn in a large bowl. We’ll have a lot of stirring to do, so make sure you have a bowl big enough to do it.
Get out a skillet or saucepan and melt some of our Rich and Creamy Honey Butter. It adds a touch of honey sweetness that really shines through. Add some marshmallows and keep stirring on medium low heat until it’s all melted together. Always melt marshmallows over low heat. The sugar content is so high that they’ll burn very easily if you’re not careful.
Drizzle the melted marshmallow/honey butter mixture over the popcorn and gently stir it to ensure every piece of popcorn is coated.
Now for the candy!
Candy
Our recipe calls for several types of M&Ms, some marshmallows picked out of the Lucky Charms box, and sprinkles. But use whatever candy you can find at the store. Each year, the St. Patrick’s Day treats are a little different. We were able to find regular M&Ms, mini M&M, pretzel M&Ms (a great salty crunch) and mint M&Ms as well (which were surprisingly delicious!), along with some really festive green and gold sprinkles.
We also went totally crazy and separated the M&Ms into colors — we only used the green and brown ones. We also separated the Lucky Charms marshmallows– we only used the rainbows and unicorns. You don’t have to do that, but it was fun to have only festive colors. This is a great way to have your kids help.

Directions
- Pop popcorn and salt to taste in a large bowl.
- In a large skillet, melt Honey Butter over medium heat. Add mini marshmallows. Stir constantly until the marshmallows are melted.
- Pour the marshmallow mixture over the popcorn and fold gently until popcorn is well coated.
- Sprinkle the candy, marshmallows, and sprinkles over the popcorn. Stir to combine, and allow to set, then break into pieces and serve.
