Scallops over Garlic Mashed Potatoes

- Lemon Dill Saute' Butter
- Garlic Butter with Parmesan and Basil
- Heat skillet to medium-high, place 2-3 Tbsp Lemon Dill Butter, add scallops and sear
- for a nice blackened look and taste.
- Fold 2 Tbsp Chef Shamy Garlic Butter with Parmesan and Basil into mashed potatoes.
