The Breakfast Sandwich

A breakfast sandwich can be a thing of beauty– when it’s done right. Don’t worry folks, we’ve got a crowd pleaser here. This sandwich is stuffed with ham, cheese, and scrambled eggs.

It’s a copycat recipe of a sandwich at one of America’s favorite eat-in breakfast places. But since “Hammy” and “Shamy” rhyme, we figured we’d do a fun play on words.

The “Shamy” part of this recipe is, of course, Chef Shamy Garlic Butter. Our delicious, flavorful butter is generously smeared over thick slices of bread and then toasted to crisp-on-the-outside-soft-on-the-inside perfection. It’s like having your favorite breakfast sandwich between two slices of Garlic Bread.

And it’s the Garlic Butter that sets us apart from the original sandwich. But boy, does it make a difference. Having that little kick of garlic really makes all of the other flavors pop– and cuts through the richness of the inside of the sandwich.

The Inside

So let’s talk about the inside of the sandwich. As mentioned above, there’s scrambled eggs, ham, and cheese.

Scrambled eggs are pretty easy, but make sure you don’t overcook them. They’ll be rubbery and gross. Eggs continue to cook after you’ve taken them out of the pan, so pull them out a little before they are done. And don’t forget to add salt and pepper!

We used deli slices of ham. Get them as thick or as thin as you want them. Also, add as many or as few slices on the sandwich as you prefer. It’s your breakfast, make it how you like it!

Two different cheeses here: Swiss and cheddar. You need them both, trust me. We bought pre-sliced cheese at our supermarket, because it’s so thin.

As far as the outside of the sandwich is concerned, be generous with the Garlic Butter! The bread will thank you!

  • 2 eggs

  • Salt and pepper, to taste

  • 2 slices sourdough bread

  • 1 T Chef Shamy Garlic Butter

  • 4 slices ham deli, sliced thin

  • 1-2 slices cheddar cheese

  • 1-2 slices Swiss cheese


  • Crack eggs into a small bowl, and whisk until smooth. Add them to a greased skillet. Season with salt and pepper and cook over medium heat, stirring frequently, until they have set. Remove from the pan and set aside.
  • Butter one side of both slices of bread. Place one slice butter side down on a skillet over medium heat. Layer: Cheddar cheese, ham, then scrambled eggs. Lay the other slice, butter side down, next to it. Place Swiss cheese on top..
  • Cook 2-3 minutes, until bread is toasted, then gently flip the bread with the Swiss cheese on top of the other half to make the sandwich. Serve.
