I know what you’re thinking. Another grilled cheese? Haven’t we done enough of those yet? Never! Not when they’re so versatile and so delicious! And our BBQ Grilled Cheese Sandwich is reeeeeaaaally good.

Sorry for all the vowels, but it’s real tasty, and I wanted to make sure you knew.

A grilled cheese is a simple and quick meal. But this one has an extra step that adds a few minutes to the cooking time, but it’s definitely worth it. Let’s discuss.

Caramelized Onions

We start by caramelizing thinly sliced onions in our Fresh Churned Garlic Butter. It adds a delicious depth of flavor. The garlic compliments the natural sweetness of the caramelization. And caramelization is what we want– not just cooked onions.

It takes some patience. Keep the heat on medium and cook those onions for about 10 minutes, stirring occasionally. They should shrink down and become brown. See the photo above.

Cheese and Sauce

We’re using Garlic Butter on the bread, like usual, but the other two elements of the sandwich are what really send this one over the top: BBQ sauce inside the sandwich. You can use whatever sauce is to your liking– a sweet one or a tangy one. However you like it.

Then cheese– we used good old fashioned cheddar cheese, and lots of it. We did more slices than normal, and it was extra cheesy. The BBQ sauce cuts through the richness of the cheese: absolutely delicious!

  • Melt 2 Tablespoons Garlic Butter in a skillet over medium heat. Add red onion and cook 10-15 minutes, stirring occasionally, until onions are caramelized. Remove from pan.
  • Divide the rest of the Garlic Butter evenly between the 4 slices of bread. Place bread butter side down on a skillet over medium heat. Spread BBQ sauce evenly on two slices of bread, then put the caramelized onions on top of that.
  • On the other two slices of bread, add slices of cheddar cheese. Cook 5 minutes, until bread is toasted and cheese is melted. Combine to make 2 sandwiches.
  • Serve.
