Grilled Cheese
Grilled Cheese is one of our signature recipes here at Chef Shamy. It’s a very versatile sandwich, and we’ve definitely done a lot of different variations on it. But this might be my favorite overall! That’s right, it’s an Apricot Brie Grilled Cheese!
A grilled cheese is an easy sandwich to make. The best way to put some extra flavor into America’s favorite is by using our Fresh Churned Garlic Butter. You use butter on the outside of the bread to help it toast anyway– why not use Garlic Butter? It’s like having a garlic bread grilled cheese!
Apricot Brie
Don’t doubt this combination, folks, it’s amazing! Fruit and cheese works well together– especially fruit and Brie!
The apricot preserves are tangy and and sweet. Mix it with the creamy, rich flavor of the Brie– then add the Garlic Butter on French bread, and WOW! It’s a fantastic bite!
The mixture inside the sandwich becomes gooey delicious– so good!
Brie Cheese
I’ll be honest, I don’t usually have Brie cheese in my fridge. So if you’re unfamiliar with this ingredient, don’t stress about it. You can find it near the other cheeses in your grocery section. Usually it comes in a wheel.
You definitely need to remove the rind– I just cut it off with a knife. If the cheese has been sitting out of the fridge for a few minutes, it will be spreadable, similar to the texture of a cream cheese. Spread it on your sandwich and let it melt together with that apricot jam!

Apricot Brie Grilled Cheese

4 slices French Bread
3-4 T apricot jam
4 oz. Brie cheese, rind removed
Directions
- Spread Garlic Butter on one side of each slice of bread. Place bread butter side down on a large skillet over medium heat.
- Divide apricot jam evenly between two slices of bread. Spread Brie cheese over the other two slices of bread.
- Cook until bread is toasted, then make 2 sandwiches by pairing a slice with apricot jam with a slice with Brie.
- Serve.
