Ingredients

  • 4 boneless skinless chicken breasts, pounded to even thickness

  • Salt and pepper, to taste

  • Italian seasoning, to taste

  • 4 T Chef Shamy Garlic Butter, melted

  • 3 tomatoes, chopped

  • 1 T fresh basil, chopped

  • Salt and pepper, to taste

  • Squeeze of lemon juice

  • 4 slices mozzarella cheese

Directions

  • Season chicken breasts with salt, pepper, and Italian seasoning.
  • Preheat grill.
  • Meanwhile, make the bruschetta. Stir together tomatoes, basil, salt, pepper, and lemon juice.
  • Once grill is preheated, cook chicken breasts 5-6 minutes each side, basting generously with Garlic Butter on both sides. Chicken should reach an internal temperature of 165° F when fully cooked.
  • Place a slice of mozzarella cheese on each breast and close grill lid for 3-5 minutes, until cheese is melted.
  • Top chicken with bruschetta and serve.
