Pasta e Fagioli Soup

Pasta Fagioli Soup is a classic Italian soup (the true Italian name is above). The translation actually means, “pasta and beans.” This is one of my favorite soups. Our recipe is hearty and delicious — packed with pasta, beans, veggies, and sausage, all in a rich tomato broth. It’s very easy to make, and your whole family will love it!

A steaming bowl of hot soup on a cold night is one of the best things in the world — one of life’s little joys. This soup also reheats well so you can enjoy it several nights in a row (though I doubt it will last that long — it disappears fast at my house!).

Let’s talk through the recipe.

Sausage and Veggies

This recipe starts with a dollop of our Fresh Churned Garlic Butter. It’s a great way to immediately infuse flavor into the sausage that follows it. Brown the sausage, letting it soak up all that delicious garlic flavor. We used a mix of mild and spicy, but feel free to use all mild or all spicy according to your preference.

Once the meat is browned, add onions, carrots, and celery. Let the vegetables saute — once they’re soft, we’ll move on the next stage.

Pasta and Beans

Next come the beans, broth, and tomatoes. Everything comes from a can, which makes it simple and easy! Stir everything to together and bring it to a boil. Add your pasta and cook according to the package directions.

We used ditalini pasta, which is a very small tube pasta. It’s sometimes called “short macaroni!” Feel free to use any shape pasta you have, as long as it’s a relatively short one.

Ingredients

  • 3 T Chef Shamy Garlic Butter

  • 1 lb ground pork sausage (mild or spicy)

  • 1 yellow onion, finely diced

  • 3 carrots, finely diced

  • 2 celery stalks, finely diced

  • 5 cups chicken broth

  • 14.5 oz can cannellini beans, rinsed and drained

  • 14.5 oz can red kidney beans, rinsed and drained

  • 15 oz can diced tomatoes, with their juices

  • 15 oz canĀ  tomato sauce

  • 1 tsp each salt and pepper

  • 1 T each fresh thyme and fresh rosemary, chopped

  • 4 oz (1 cup) ditalini pasta

  • 3 T fresh parsley, chopped

  • Parmesan cheese, for serving

Directions

  • Melt Garlic Butter in a large pot over medium heat. Add sausage and brown. Then add onion, carrots, and celery and saute 3-5 minutes, or until onions are soft.
  • Add chicken broth, beans, tomatoes, tomato sauce, salt, pepper, and fresh herbs. Stir to combine.
  • Bring to a boil and simmer 5-10 minutes. Add pasta and cook according to package directions. Once pasta is cooked, add fresh parsley and serve with Parmesan cheese.
