Loaded Baked Potato Grilled Cheese

  • 1 medium yellow potato
  • 8 slices sourdough bread
  • 5 T Fresh Churned Garlic Butter
  • ⅓ cup sour cream
  • 16 slices cheddar cheese
  • 1 lb bacon, cooked
  • ¼ cup chopped green onion
  1. Use a mandolin or knife to put potato into thin slices. Wash, and set aside.
  2. Butter slices of bread with Garlic Butter. Put bread butter side down on a skillet or large pan over medium heat.
  3. Gently spread sour cream evenly over 4 slices of bread. Add cheddar cheese, slices of bacon, slices of potato, and green onions.
  4. When bread is toasted and cheese is melted, flip bread over to make 4 sandwiches.
  5. Serve immediately.

    What a great combination of two of my favorites!! But I was wondering, Does the potato cook during the grilling process or should they be pre-cooked before slicing?
    Definitely something I will try as soon as the Arizona summer weather drops below 100 degrees.

    Thanks, Fern! We sliced the potatoes thin enough that we didn’t need to cook them beforehand. If you want a thicker potato, then I would recommend cooking it prior to putting it in the sandwich.
