Grilled Pound Cake with Berries
1 cup sliced fresh strawberries
1 cup fresh raspberries
1 cup fresh blackberries
2 T granulated sugar
3-4 leaves fresh mint, chopped
1 cup heavy whipping cream
2 T powdered sugar
Chef Shamy Strawberry Butter, at room temperature
6-8 slices pound cake (1 inch thick)
- In a large bowl, combine strawberries, raspberries, blackberries, granulated sugar, and fresh mint. Toss to combine. Set aside.
- Meanwhile, whip heavy cream and powdered sugar until stiff peaks. Set aside.
- Spread Strawberry Honey Butter on each side of slices of pound cake. Grill 2-3 minutes each side, until butter is caramelized.
- Serve grilled pound cake with berries and whipped cream.
