Garlic Creamed CornCourse: sides
1 onion, finely diced
4-5 ears of corn
Salt and pepper
1 tsp sugar
Pinch of nutmeg
½ cup heavy cream
- Remove corn kernels from the cobs. Use the back of the knife to scrape the pulp out.
- Melt Garlic Butter in a skillet over medium heat. Add onions and corn (and pulp). Stir to coat with butter. Season with salt and pepper.
- Cook 8-10 minutes, stirring occasionally, until onions and corn are cooked.
- Sir in sugar, nutmeg, and heavy cream.
