Zucchini Corn Flatbreads

These Zucchini Corn Flatbreads are so simple and delicious that you’ll want to make it over and over again. It’s perfect for a quick lunch or a busy weeknight dinner. Adults and kids alike will love it; plus the whole thing takes less than half an hour, with minimal work on your part!

A flatbread is topped with fresh zucchini, corn, and Parmesan cheese, and flavored with za’atar seasoning and our Black Truffle Butter. Yum! Let’s talk through the specifics.

 

 

Flavor Flavor Flavor

A flatbread — known to some as a pocketless pita — is just what it sounds like: a flat piece of bread, usually round. You can find them in most grocery stores. Feel free to adjust this recipe depending on how many people you’re feeding. Four flatbreads equal sixteen wedges, usually enough for four people.

Brush those flatbreads with some of our Chef Shamy Black Truffle Butter. Make sure to spread it all the way to the edges! It adds so much flavor, you won’t want a bite without it.

Then add your veggies. Use a vegetable peeler to cut a zucchini squash into long, thin ribbons. Arrange them artfully on your base. Then cut the corn off a couple cobs (or use frozen –thawed- corn if needed). Sprinkle some Parmesan shavings on top and you’re almost done!

 

 

Za’atar

If you’re unfamiliar with za’atar seasoning, it’s fantastic and very versatile. Each Za’atar blend may be a little different, and often recipes are secret. Za’atar is usually a combination of dried oregano, thyme, marjoram, sumac, toasted sesame seeds, orange zest, and dill. It also includes a wild herb called, wait for it, za’atar.

It’s a fantastic flavor combination — earthy, bright, and nutty all rolled into one! It’ll take these flatbreads to a special place.

Za’atar Zucchini Corn Flatbreads

Ingredients

  • 4 round flatbreads

  • 2 T Chef Shamy Black Truffle Butter, melted

  • 1 small zucchini, cut into thin ribbons

  • 2 cobs corn, kernels cut off

  • 1 cup shaved Parmesan cheese

  • ½ tsp Za’atar seasoning

  • Salt and pepper, to taste

  • Red pepper flakes, to taste

Directions

  • Preheat oven to 400° F.
  • Place flatbreads on a baking sheet. Brush flatbreads with Black Truffle Butter, spreading evenly.
  • Place zucchini ribbons and corn kernels evenly on the pitas. Top with shavings of Parmesan cheese.
  • Sprinkle Za’atar seasoning on top, then season with salt, pepper, and red pepper flakes to taste.
  • Bake at 400° F for 10-20 minutes, or until flatbread is crisp on the edges.
  • Cut flatbreads into wedges and serve.
