Smoky Keto Chicken Meatballs with Zoodles

Ingredients

  • 1 pound ground chicken

  • 2 eggs

  • 1 shallot, diced small

  • 1 cup Parmesan cheese

  • ½ tsp smoked paprika

  • ½ tsp salt

  • 1/2tsp pepper

  • 2 T chopped fresh parsley

  • 4 T Chef Shamy Garlic Butter

  • Zucchini noodles or low carb pasta

Directions

  • In a large mixing bowl, add ground chicken, eggs, shallots, Parmesan cheese, paprika, salt, pepper, and fresh parsley. Mix until well combined. Form into meatballs (about golf ball size).
  • Melt Garlic Butter in a large skillet over medium heat. Add meatballs in a single layer and cook 4-5 minutes, then flip. Cook 4-5 minutes more, or until internal temperature reaches 165°.
  • Remove from pan.
  • Add zoodles (or cooked pasta if using) and toss with a little more Garlic Butter if desired. Serve with meatballs.
