Smoky Keto Chicken Meatballs with ZoodlesCourse: Lunch, Dinner
1 pound ground chicken
1 shallot, diced small
1 cup Parmesan cheese
½ tsp smoked paprika
½ tsp salt
2 T chopped fresh parsley
Zucchini noodles or low carb pasta
- In a large mixing bowl, add ground chicken, eggs, shallots, Parmesan cheese, paprika, salt, pepper, and fresh parsley. Mix until well combined. Form into meatballs (about golf ball size).
- Melt Garlic Butter in a large skillet over medium heat. Add meatballs in a single layer and cook 4-5 minutes, then flip. Cook 4-5 minutes more, or until internal temperature reaches 165°.
- Remove from pan.
- Add zoodles (or cooked pasta if using) and toss with a little more Garlic Butter if desired. Serve with meatballs.
