Smoky Keto Chicken Meatballs with Zoodles

  • 1 pound ground chicken
  • 2 eggs
  • 1 shallot, diced small
  • 1 cup Parmesan cheese
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½tsp pepper
  • 2 T chopped fresh parsley
  • 4 T Chef Shamy Garlic Butter
  • Zucchini noodles or low carb pasta
  1. In a large mixing bowl, add ground chicken, eggs, shallots, Parmesan cheese, paprika, salt, pepper, and fresh parsley. Mix until well combined. Form into meatballs (about golf ball size).
  2. Melt Garlic Butter in a large skillet over medium heat. Add meatballs in a single layer and cook 4-5 minutes, then flip. Cook 4-5 minutes more, or until internal temperature reaches 165°.
  3. Remove from pan.
  4. Add zoodles (or cooked pasta if using) and toss with a little more Garlic Butter if desired. Serve with meatballs.
