I’ve been making a lot of heavy meals lately for the blog. But a blog about butter is often full of delicious, indulgent recipes. After all, we want to Make the World a Butter Place™. I felt the need for something lighter: enter Avocado Toast. But what makes this Avocado Toast different? Garlic Bread.
There are many variations on this, for example, instead of goat cheese, you can use mozzarella. Instead of bacon, you can use tomatoes. The possibilities are endless. If you would like to go the healthier route, stick with wheat bread and only spread a thin layer of the garlic butter.
Avocados are Fruit
Interestingly enough, avocados are a fruit. They grow from trees and have a seed. It’s a very big seed, but a seed nonetheless. I’ll tell you what, though, when I was living in Brazil, we didn’t see any of these puny avocados we get in the States. Avocados there are more often than not bigger than my open hand. And they taste so delicious! We’d even make avocado milkshakes, which sound weird, but don’t knock it before you try it. They only have 3 ingredients: milk, sugar, and avocado. Sometimes on the West Coast you can get avocados like in Brazil, but for our avocado toast, we will have to work with what we can get.
Picking a Ripe Avocado for Avocado Toast
One item key to our Avocado Toast is picking a ripe avocado. If you don’t, it just won’t taste right and might even turn you away from avocados. To pick one that is ready to eat today or tomorrow, you’ll want one that is dark in color and yields slightly to pressure. If you press on it and it is hard or the color is a lighter green, then you’ll have to wait four or five days for it to be ready to eat.
Garlic Bread Avocado Toast with Bacon

French Bread, sliced
2 Avocados, ripe
Salt & Pepper, to taste
Squeeze lemon juice
2 oz goat cheese
1/2 cup bacon, crumbled
Directions
- Preheat oven to 350° F.
- Arrange bread on a pan and spread a layer of Chef Shamy Garlic Butter on one side of bread, edge to edge. Place in oven to bake for 5-10 minutes, or until bread is toasted and butter is melted.
- Meanwhile, place avocado in a large bowl and smash with a fork. Season with salt, pepper, and lemon juice. Spread avocado on top of toasted garlic bread.
- Top with crumbled cheese, then add bacon.
- Serve immediately.
